Moo-Shu Chicken

Okay I got this recipe from a magazine.  I can't remember where, but it could have been Rachael Ray.

Here is my version as I almost always change a recipe to fit our taste buds.

1 Tbsp - Sesame Oil
2 Cloves Garlic (chopped, minced, pressed, however you want to do it)
10oz - Shredded Coleslaw
8oz - Shredded Carrots
1/4 Cup - Hoisin Sauce (Use a little more if it looks dry)
2 Tbsp - Soy Sauce
Flour Tortillas
3 Cups - Shredded Chicken (cooked) I use chicken leftover from a whole chicken I have cooked earlier in the week.

Heat oil, add garlic in a large wok or pot.  Then add in the coleslaw and carrots and cook until everything is soft or about 8 minutes.  Stir in the sauces and chicken.  Cook until chicken is heated through.  Spoon into tortilla shells and serve.

You can buy the carrots and coleslaw already shredded.  However if you have the time, it is cheaper to do it your self.  Buy the carrots and shred, buy cabbage and chop.  Or if you have a food processor, you can do it yourself in just a few minutes.  This meal should take you about 20 minutes total.
